Liz Scott has managed to find a healthier way to prepare so many amazing recipes. My first choice was the "Easy-as-Pie Apple Pie" recipe on page 203!
This recipe really is as easy as pie! It only calls for 7 ingredients. Pie crust, apples, sugar substitute and the spices. There is even a recipe in the book for Sugar-Free pie crusts! There are only 6 steps to follow and you will shortly find yourself with a homemade apple pie baking in the oven.
After about 30 minutes of prep time, into the oven it went! My sugar-free apple pie baked for 45minutes on 425 degrees. Here is the finished product:
I served it up with scoop of vanilla ice cream and the crowd went wild! Now, the ice cream wasn't sugar-free, but by baking a healthier pie at home with less calories and less sugar than a store bought pie, we can afford to treat ourselves to a little ice cream.
Here's to a healthier year! Happy New Year!

That looks great! I know I'm trying to cook more in 2013 and hope to achieve a healthier diet for our family. Thank you for featuring that healthy can be goodies too!
