Summer Camp at The Cove Waterpark

The Cove Waterpark's Summer Cove Camp features fun indoor and outdoor activities and games that will keep your child active and engaged throughout the summer! This camp runs from 8:00 am - 4:00 pm Monday through Friday and starts each day with a swim lesson. This camp is geared toward kids ages 5-12 looking for adventure! Cove Camp participants will get to experience all that The Cove Waterpark has to offer! Each week has a new theme to keep things fun and exciting. The Fast Metabolism Diet Party!

It's no surprise that diets are not easy. This is old news, right? Often times our hectic schedules are to blame for poor eating habits. I am so consumed with my daily routine that I just can't even think about dieting...until now! Thanks to The Fast Metabolism Diet by celebrity nutritionist, Haylie Pomroy, I can lose up to 20 pounds in 28 days by following the 3 phases of her simple plan. Haylie's book is not your typical "diet" book. It's more of a handy helper that teaches you how to trick your metabolism by rotating what you eat each week and by NOT counting calories! She believes that by eating more food we can lose more weight and I like the way that sounds! If you can stick to The Fast Metabolism Diet, in 4 weeks you should be able to see the weight loss, your cholesterol drop, your energy increase, your sleep improve and your stress levels decrease. Now, why wouldn't you want to give it shot? I couldn't wait to share this book with my friends and family so I hosted a "Diet" Party and invited them over to check out the book and try a new chili recipe made in my fancy new slow cooker.
 
The girls didn't hesitate to crack their books open and start reading about Haylie's plan. They were surprised to see so many healthy versions of their favorite foods. Haylie's book offers 4 weeks of meal plans with over 50 recipes included. She also has vegetarian, organic and gluten-free options. I even got the guys in on all the healthy action! Who says men don't diet?
 
I decided to serve my friends chili for the party because I think chili is the perfect comfort food to gather friends around a table and dig into a good book. Haylie has an amazing chili recipe in her book that is so easy to follow. All of the ingredients go right into the slow cooker for 5 hours. That gave me plenty of time to set the table, prepare all of the garnishes and read a little more of the book myself.
 
The chili was a HIT!!! Even my husband said it was the best chili he's had. Thanks Haylie! We had a great time learning how to boost our metabolisms while eating a great meal. This is definitely a plan that I can make time for. I look forward to seeing the progress we all make in 4 weeks. Here is Haylie's delicious and simple recipe for chili:

Turkey or Buffalo Chili

Serves 6 (a single portion is 1.5 cups)
Prep time: 25 minutes. Cook time: 5 to 8 hours, depending on slow-cooker setting

Ingredients

  • 1 to 1½ pounds lean ground turkey or buffalo meat
  • ½ cup diced red onion, or more if desired
  • 2 Tbls. fresh parsley or cilantro
  • 1 heaping Tbls. chili powder
  • 1 Tbls. minced garlic
  • ½ tsp. crushed red chili flakes
  • 15-ounce can white beans
  • 15-ounce can kidney beans (no sugar added)
  • 15-ounce can black beans
  • 15-ounce can pinto beans
  • 15-ounce can lentils or adzuki beans
  • 4 cups chopped zucchini
  • 4 cups (32 ounces) organic red bell pepper tomato soup or tomato soup (I like Pacific or Imagine brands)
  • 1 heaping tsp. sea salt
Brown the turkey or buffalo meat in a skillet and drain.
Turn a slow cooker to high setting. Add the meat, onion, parsley, chili powder, garlic, and red pepper flakes to the pot. Stir, cover and set aside.
Open and partially drain all 5 cans of beans; I leave a little liquid in to make my chili a little juicier. Add the beans, zucchini, and soup to the cooker. Stir well. Keep the cooker set on high for 4 to 5 hours or adjust heat to low and simmer for 6 to 8 hours.
Stir and taste occasionally, adjusting seasonings as needed. Add the salt just before serving to best preserve its nutrients.
Note for those following the Fast Metabolism Diet: This meal is appropriate for Phase One. Because this chili contains such a large amount of starchy legumes, it counts as a Grain as well as Protein and Veggie servings. No need to add an additional grain to the meal, even if the meal map specifies a grain.

Pirates of the Caribbean will be part of the title’s starter pack that is launching on August 18, along with The Incredibles and Monsters University.

"That's Fresh: For Kids" on Disney Junior

This week Disney Junior debuted a new show called "That's Fresh: For Kids," a new version of the popular Disney Junior Night Light cooking series "That's Fresh," with new episodes debuting every morning on Disney Channel throughout the week. Hosted by Chef Helen Cavallo, the series encourages young viewers to play an active role in the cooking process and imparts the importance of healthy eating habits.

In each episode, Cavallo prepares simple and nutritious recipes that require no sharp objects or cooking so that young viewers at home can safely assist their parents or caregivers.

I watch the cooking series every night with my kids and I am really excited to watch the new version of this great show:

Del Taco to Offer Free Food Wednesdays Beginning May 8
Launch of New Buck & Under and New Tastes Menus
 
As Del Taco rolls out changes to their restaurants the new Buck & Under and New Tastes menus continue to generate positive consumer buzz. The new menus made their system-wide debut with the overall brand relaunch on April 24.

"Our new menus set us apart by featuring a wide variety of new and classic choices with prices that are unbelievable," said John Cappasola, chief brand officer at Del Taco. "We’re so confident guests will enjoy the new Buck & Under and New Tastes menus, that we are offering a chance to try a menu item for free every Wednesday in May."

Beginning on May 8, Del Taco will introduce Free Food Wednesdays and from 3 – 9 pm will offer an item from the Buck & Under menu free with any purchase.* This offer will also be available on May 15. On Wednesday, May 22 and May 29, Del Taco is offering a free item from the New Tastes menu with any purchase.

The new Buck & Under menu offers the best price value variety in the restaurant category. With 11 items priced starting at 50¢, this menu includes a Mini Cheddar Quesadilla, Value Bean & Cheese Burrito, Regular Taco, Mini Bacon Quesadilla, Jacked Up Value Bean, Rice & Cheese Burrito, Crunchy Chipotle Beef Taco, Grilled Chicken Taco, ½-Pound Bean & Cheese Burritos, Double Beef Classic Taco, Real Strawberry Lemonade and Medium Size Freshly Brewed Iced Tea.

The New Tastes menu includes a Bacon Ranch Grilled Chicken Taco, a Chili Cheese Fry Burrito and a Fiery 6 Layer Burrito.

"We’ve seen tremendous excitement in our restaurants and online about our new menus," said Cappasola. "Free Food Wednesdays in May give guests another reason to come in and experience the new Del Taco."

At Del Taco, all menu items are prepared to order using fresh ingredients including cheddar cheese grated from 40-pound blocks, hand-made pico de gallo salsa featuring ripe tomatoes, diced onions and fresh cilantro, lard-free beans slow cooked from scratch with Del Taco’s signature flavor, and marinated chicken grilled in the restaurants.

Del Taco has more than 550 restaurants in 18 states.

Helen Mirren, Alfred Molina, Dave Foley, Sean P. Hayes and More Join Billy Crystal, John Goodman and Steve Buscemi in a Remarkable Roster of Monster Voices

Disney•Pixar’s “Monsters University” welcomes some of Hollywood’s top stars to its roster of voice talent for this summer’s frighteningly funny comedy adventure, opening in U.S. theaters on June 21, 2013. Joining Billy Crystal and John Goodman are Steve Buscemi, Helen Mirren, Alfred Molina, Dave Foley, Sean P. Hayes, Joel Murray, Peter Sohn, Charlie Day, Nathan Fillion, Bobby Moynihan, Julia Sweeney, Aubrey Plaza, Tyler Labine, John Krasinski, Bonnie Hunt, Beth Behrs and John Ratzenberger. Also revealed this week were the story and screenplay credits. Directed by Dan Scanlon, “Monsters University” features a story and screenplay by Daniel Gerson & Robert L. Baird (“Monsters, Inc.”) and Scanlon.
Scanlon says the cast was able to bring the story to life with great ingenuity and enthusiasm. “Working with this group of actors was an extraordinary experience. They each brought a unique level of humor, emotion and creativity to their work that not only complemented their individual performances, but made the overall story come together in a really wonderful way.”
 
The voice cast includes the following:
 
· Billy Crystal (“Parental Guidance,” “When Harry Met Sally,” “City Slickers”) reprises his role as Mike Wazowski, now a college-age monster who follows his dream of becoming a Scarer at Monsters University.
· John Goodman (“Argo,” “Flight,” “Trouble With the Curve”) returns as James P. Sullivan (Sulley), an overly confident, young hotshot Scaring student at Monsters University.
· Steve Buscemi (“Boardwalk Empire”) rejoins the monster world as Randy Boggs, a Monsters University freshman who is ready to experience all that college has to offer (if only he can curb his habit of disappearing).
· Helen Mirren (“Hitchcock,” “The Queen”) gives voice to Dean Hardscrabble, legendary Scarer and hard-to-please head of Monsters University’s prestigious School of Scaring.
· Alfred Molina (TNT’s “Monday Mornings,” “The Da Vinci Code,” “Frida”) is the voice of Professor Knight, an esteemed professor in Monsters University’s School of Scaring.
· Dave Foley (TV’s “NewsRadio,” “The Kids in the Hall”) as Terry Perry, the skeptical half of a bickering two-headed monster and dedicated Oozma Kappa (OK) brother.
· Sean P. Hayes (“The Three Stooges,” TV’s “Up All Night”) gives voice to Terri Perry, the more sensitive side of a two-headed Oozma Kappa (OK) fraternity brother with Scaring aspirations.
· Joel Murray (TV’s “Mad Men,” “Two and a Half Men”) voices Don Carlton, a “mature” student at Monsters University and a founding member of the Oozma Kappa (OK) fraternity.
· Pixar’s Peter Sohn (“Ratatouille,” “Small Fry”) provides the voice of Scott “Squishy” Squibbles, an undeclared sophomore at Monsters University and Oozma Kappa (OK) fraternity member who still lives with his doting mother.
· Charlie Day (“Horrible Bosses,” “Pacific Rim,” TV’s “It’s Always Sunny in Philadelphia”) provides the voice of the incomparable Art, an Oozma Kappa (OK) fraternity brother with a questionable past.
· Nathan Fillion (“Much Ado About Nothing,” “Percy Jackson: Sea of Monsters,” TV’s “Castle”) portrays Johnny Worthington, the confident president of Roar Omega Roar (ROR), a Monsters University fraternity that prides itself on its notable Scarers.
· Bobby Moynihan (NBC’s “Saturday Night Live,” HBO’s “Girls,” DreamWorks Studios’ “Delivery Man”) helps bring to life Chet Alexander, a yes-monster member of the Roar Omega Roar (ROR) fraternity.
· Julia Sweeney (TV’s “The Goode Family,” “Saturday Night Live”) lends her voice to Ms. Squibbles, indulgent mother to Monsters University sophomore Scott “Squishy” Squibbles.
· Aubrey Plaza (“To Do List,” TV’s “Parks and Recreation”) gives voice to Claire Wheeler, the somber president of Monsters University’s Greek Council and emcee for the annual Scare Games.
· Tyler Labine (“Tucker & Dale vs. Evil,” “Mad Love”) was tapped to voice Brock Pearson, vice president of the Greek Council and enthusiastic emcee of the Scare Games.
· John Krasinski (“Promised Land,” TV’s “The Office”) provides the voice of “Frightening” Frank McCay, a Scaring super star at Monsters, Inc.
· Bonnie Hunt (TV’s “The Bonnie Hunt Show,” “Cheaper By the Dozen”) was called on to provide the voice of young Mike Wazowski’s grade school teacher Karen Graves.
· Beth Behrs (TV’s “2 Broke Girls”) serves as the voice of Carrie Williams, fearless leader of the Python Nu Kappa (PNK) sorority.
· John Ratzenberger (“Cheers,” Disney•Pixar’s feature films) returns to the Pixar recording studio as the voice of a Monsters, Inc. employee.
